Ginger-Cake Shortbread Cobbler

The Ginger-Cake Shortbread Cobbler is a great dessert for the holiday season or any special occasion that calls for a sweet and tasteful recipe. With its fruity taste and hint of ginger, this cobbler will have you begging for the recipe of this brilliant creation.

Ingredients:

1 Cup of butter (soft for easy mixing)
1/2 cup of brown sugar (light)
1/8 tsp of salt
2 1/4 cups of flour
1 piece of peeled ginger
3/4 cup of sugar (turbinado)
7 peaches
2 tbls lemon juice
1 white egg
2 tsp sugar
Step by step directions:

Preheat oven to 400 degrees

Beat together the butter, brown sugar, flour and salt with an electric mixer

Place your dough on to a floured surface and start rolling the dough into peaces that are 1/4 of an inch thick

Use a round cutter and cut out 14 pieces. Place them on a baking sheet

Put the turbinado sugar and ginger into a food processor and pulse for 1 minute.

Add in lemon juice, peaches and remaining flour

Bake at 400 degrees for no more than 15 minutes

Take mixture out of the oven and place the dough rounds throughout the mix

Place everything back into the oven and bake until they are golden brown
